INGREDIENTS:
- 800g fish (mixed, for stew)
- 2 large onions
- 3 garlic cloves
- 2 bay leaves
- 2 tomatoes
- 4 large potatoes
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1/2 green bell pepper
- 200ml white wine
- 200ml water
- 1 bunch of parsley or cilantro
- Sweet paprika, pepper and salt to taste
- Olive oil to taste
PREPARATION:
In a wide pot, drizzle a little olive oil and add one sliced onion, 2 sliced garlic cloves, 2 sliced potatoes, one sliced tomato, 2 bay leaves, and part of the green, yellow, and red peppers. Add parsley to taste and the fish for the stew.
Add the other onion, the other sliced tomato, the remaining green, yellow, and red peppers in layers, the other sliced garlic clove, and 2 more sliced potatoes.
Season with sweet paprika, pepper, and salt to taste, and parsley. Drizzle with white wine and water. Check that the pot has water halfway up. Drizzle with olive oil.
Cover the pot and bring to a boil over medium-low heat for about 30 minutes, gently shaking the pot from time to time.
Place the stew on a serving platter, garnish with parsley, and serve.
