Preparation time: 10 mins  |  Cooking time: 25 mins  |  Serves: 6 - 8 people

INGREDIENTS:

  • 6 eggs
  • 250 g of sugar
  • 200 g of grated coconut
  • juice of 1 lime
  • 50 g melted low-fat butter
  • Tracing paper

PREPARATION:

Preheat the oven to 180ºC.

Line a tray with parchment paper and set aside.

In a bowl, beat the eggs with the sugar until you get a fluffy, whitish cream. Add the coconut, juice of 1 lime and melted butter. Beat everything very well.

Pour the dough onto the tray and place in the preheated oven at 180ºC for 25 minutes.

Sprinkle with grated coconut, roll into a pie shape and remove the paper. Let cool and sprinkle with grated coconut and serve.
