Preparation time: 30 mins  |  Oven time: 30 mins  |  Serves: 4 - 6 people

INGREDIENTS:

  • 200 g shortcrust pastry
  • 250 g of curd cheese (can be cow, sheep or goat cheese, or a mixture of the three)
  • 100 g of sugar
  • 3 eggs
  • 1 tablespoon cornstarch
  • Zest of half a lemon
  • 200 g of cream
  • powdered sugar for sprinkling

PREPARATION:

Heat the oven to 200ºC. Line a tart pan with the shortcrust pastry and prick the bottom with a fork.

Add the cream cheese with the sugar and beat everything until it forms a smooth cream.

Add the eggs one by one, beating constantly until a spongy cream forms.

Add the starch, lemon zest and beat everything until all the ingredients are incorporated.

Place the previous preparation in the tart pan and bake for around 30 minutes, or until the surface is golden brown and the dough is firm. Remove from the oven and let cool slightly until unmolded. Sprinkle with powdered sugar and serve cold.

Dissolve the gelatin and let it cool. Place the gelatin on top of the strawberries and refrigerate until serving.
