INGREDIENTS:
- 8 gems
- 8 tbsp sugar
- 8 tbsp of water
- 1 lemon peel
- 1 cinnamon stick
- 1 package of filo dough
- powdered sugar
- melted butter
PREPARATION:
Separate the yolks from the whites. Prick with a fork and pass through a fine-mesh sieve and set aside.
To make soft-boiled eggs: bring a pan with water, sugar, lemon peel and cinnamon stick to a boil until it reaches pearl stage (108-109ºC). Remove from the heat and let it cool a little. Remove the cinnamon stick and lemon peel.
Then add the broken yolks, stirring constantly. Bring it back to medium heat, stirring constantly, until it thickens. Place in a bowl and store in the refrigerator until used.
Preheat the oven to 180ºC.
Work the filo dough, fold one sheet in half. Place two tablespoons of soft-boiled eggs at one end of the dough and roll it up. Brush the ends with melted butter. Fold the ends of the roll up. Repeat the same for the remaining dough. Place on a tray lined with parchment paper.
Place the pastries in the preheated oven at 180ºC for around 15 to 20 minutes. Check that the dough does not burn. Remove from the oven and place the pastries on a platter. Sprinkle with powdered sugar.
