INGREDIENTS:

  • 700 g pumpkin
  • 200 g of chickpeas
  • 1 onion
  • 2 cloves of garlic
  • 500 ml of water
  • Olive oil, pepper and salt to taste

PREPARATION:

Peel the onion and garlic and cut them into pieces.

Peel the pumpkin, remove the seeds and cut into cubes.

In a pan with boiling water, place the pumpkin, onion, garlic cloves and chickpeas (already cooked).

Cover the pan and let it cook for 20 minutes.

Using a hand blender or food processor, blend the soup until it becomes a smooth cream.

Season with salt, pepper, a drizzle of olive oil and serve.
