INGREDIENTS:

  • 125 ml milk
  • 1 tbsp lemon juice
  • 100 g butter
  • 200 g sugar
  • 2 eggs
  • 200 g flour
  • 1 Tbsp (tea) baking powder
  • zest of 1 lemon
  • 300 g of cherries

PREPARATION:

Preheat the oven to 180ºC.

In a bowl, mix the milk with the lemon juice and set aside.

Separate the yolks from the whites. Beat the egg whites until stiff and set aside.

In a bowl, add the sugar, lemon zest and butter. Beat everything until it becomes a homogeneous mass. Add the egg yolks and beat everything until you obtain a voluminous, whitish cream. Add the milk with the lemon and mix everything together.

Add the flour and baking powder. Involve everything. Add the egg whites and mix gently. Add the pitted and halved cherries. Mix everything.

Pour the dough into a pan greased with butter and sprinkled with flour.

Bake in a preheated oven at 180°C for around 40 minutes or until golden. Remove from the oven, let cool, sprinkle with powdered sugar and serve.
