Preparation

  1. In a pan, add the sugar, red wine, lemon peel, cinnamon stick and star anise.

  2. Peel the pears, remove the core and add to the pan.

  3. Bring to the boil and simmer over low heat for 30 minutes or until soft. Turn the pears occasionally.

  4. Place the pears on a platter and set aside.

  5. Add the Port wine to the syrup and let it boil until it reduces and starts to thicken.

  6. Remove the lemon peel, cinnamon stick and anise, pour the syrup over the pears and let it cool.
