INGREDIENTS:

  • 750 g spare ribs
  • 5 cloves of garlic
  • 3 bay leaves
  • 1 teaspoon sweet pepper
  • 1 tablespoon of pepper paste
  • 1 teaspoon pepper
  • 1 tablespoon of oregano
  • 200 ml of white wine
  • 100 ml of olive oil
  • 1 onion
  • 1kg of small potatoes
  • Salt to taste

PREPARATION:

Cut the ribs into small pieces, preferably in the middle of the bone. Place the pieces in a large bowl.

Add the crushed garlic cloves, bay leaves, paprika and salt, paprika and pepper paste. Add the oregano, white wine and olive oil.

Mix everything well and let it marinate for about 1 hour.

Preheat the oven to 220°C (with both elements on).

In a clay dish, spread the onion into half-moons. Place the ribs in the center of the dish, on top of the onion. Arrange the potatoes cut into pieces around the ribs.

Drizzle the marinade over the ribs and potatoes. Season the potatoes with a little more salt and finish with a drizzle of olive oil.

Place the dish in the oven at 220°C for approximately 1 hour and 20 minutes, so that it is well cooked and golden.

Remove from the oven and serve. The spare ribs should be golden in color and the potatoes should be soft on the inside and slightly crunchy on the outside.

Serve accompanied with cooked vegetables or white rice.
