INGREDIENTS:

  • 800 g of potatoes
  • 2 bay leaves
  • 2 soaked cod fillets
  • 1 onion
  • 1.5 dl olive oil
  • 2 Tbsp vinegar
  • 2 ripe tomatoes
  • 1 bunch of parsley
  • 100 g of olives
  • Salt and pepper to taste

PREPARATION:

Preheat the oven to 180º C.

Wash the potatoes and place them on the stove in plenty of water. Season with half the salt and cook for 10 minutes.

Drain the potatoes and let cool.

Place the potatoes on an oven tray and mash lightly with a fork. Drizzle with olive oil and sprinkle with the remaining salt.

Place a pan of water over medium heat and boil for 5 minutes with the bay leaves and cod fillets and cover. Remove from the heat and let it cool.

In a frying pan, with olive oil, sauté the onion and garlic, cut into thin slices. Add the cod, cleaned of skin and bones and flaked. Drizzle with vinegar.

In a serving bowl, place the potatoes, sliced tomatoes and sautéed meat. Season with salt and pepper.

Decorate with chopped parsley and black olives.
