INGREDIENTS:

  • 4 cod loins
  • Small potatoes to taste
  • Olive oil and salt to taste
  • Pepper and sweet paprika to taste

For the onion mix:

  • 1 large onion, sliced into half-moon rings
  • 3 garlic cloves, sliced
  • 2 bay leaves

PREPARATION:

Preheat the oven to 200ºC (390ºF). Place the small washed potatoes in a baking tray. Season generously with coarse salt and bake for approximately 30 minutes, or until they are soft on the inside and crispy on the outside.

In a frying pan, heat the olive oil, onion and bay leaves over medium heat. Stir and let it heat through. When the onion starts to soften, add the sliced garlic and let it warm slightly. Remove from the heat and set aside./p>

Remove the potatoes from the oven and gently smash them with your fist. In a baking dish, place the potatoes on the sides and half of the onion mix in the centre. Lay the cod loins over the onion mix and cover with the remaining mixture. Drizzle the cod and potatoes generously with olive oil.
