Preparation

  1. Bring a pan to the heat with the sugar and water, let it boil until it reaches the pearl stage (3 to 4 minutes) and turn off the heat.

  2. Add the almond flour, butter, lard and mix everything together. Bring it back to the heat and let it boil for 3 to 5 minutes, until it thickens, stirring constantly. Remove from the heat, pour into a bowl and let cool for about 10 minutes.

  3. Preheat the oven to 180ºC.

  4. Add the eggs and yolks and mix everything. Add the cinnamon powder and mix very well.

  5. Line a round pan (about 24 cm in diameter) with baking paper. Pour the dough into the mold and bake in the preheated oven at 180ºC, for around 45 minutes.

  6. Check the doneness with a toothpick and, if it comes out clean, remove the cake from the oven and let it cool. Unmold and sprinkle with powdered sugar and serve.
