INGREDIENTS:

  • 1 package of puff pastry (230 g)
  • 200 ml of water
  • 200 g of sugar
  • 40 g of type 55 flour (or cornstarch)
  • 8 gems
  • 300 ml of milk

PREPARATION:

Preheat the oven to 220ºC. Line a tart pan with puff pastry and prick the bottom with a fork.

Bring a pan with the water and sugar to the boil and let it boil until it reaches the pearl stage, for about 3 to 4 minutes. Remove from the heat and let it cool a little.

Heat another pan with the milk and flour, stirring constantly until it thickens. Remove from heat and set aside.

In a bowl add the egg yolks and beat everything. Add the syrup in a stream, stirring constantly. Add the milk mixture, stirring constantly.

Place the previous preparation in the tart pan and bake in the oven, preheated to 220ºC, for around 25 minutes, or until the surface is golden brown and the dough is firm. Remove from the oven, let cool, unmold and serve with cinnamon powder.
