Preparation

  1. Heat the oven to 180ºC. Line a tart pan with the puff pastry and prick the bottom with a fork and set aside.

  2. In a saucepan, mix the sugar with the water and the cinnamon stick, bring to the boil and let it boil, until it reaches a fine point.

  3. Drain the beans and grind them with a hand blender until you get a puree.

  4. Beat the egg yolks, using a whisk, and fold them into the bean mixture. Add the almond kernels and mix everything together. Add the syrup in a stream, stirring constantly. Pass the filling through a mesh sieve. Pour the mixture into the tart pan.

  5. Bake in the oven, preheated to 180ºC, for around 40 minutes. Once baked, remove the tart from the oven, let it cool, unmold it and sprinkle with powdered sugar and serve.
