INGREDIENTS:
- 1.5 L of water
- 2 potatoes
- 2 carrots
- 1/2 onion
- 2 cloves of garlic
- 1/2 leek
- 400 g pumpkin
- 200 ml water
- 500 g spinach
- Olive oil, salt and pepper to taste
PREPARATION:
Start by cutting the onion into half moons and slice the garlic cloves and set aside. Cut the carrots and leek into slices and the potatoes and pumpkin into cubes.
In a pan with boiling water, place the potatoes, onion, garlic cloves, carrot, leek and pumpkin. Cover the pan and let the vegetables cook.
Using a hand blender or food processor, blend the soup until it becomes a smooth cream.
Bring to a boil, add water and bring to a boil. Add the spinach, season with salt, pepper and a drizzle of olive oil. Let it boil for about 10 minutes.
Place the soup in a bowl and serve immediately.
