INGREDIENTS:

  • 10 fresh sardines
  • 3 eggs
  • 250g wheat flour
  • 2 cloves of garlic
  • 250g breadcrumbs
  • Oil for frying

For the filling:

  • 300g hard bread
  • 1 egg
  • Chopped parsley
  • Juice of 1 lemon
  • 150g of grated cheese
  • Salt, pepper and paprika

For the dough:

  • 300g skein dough (or your choice)
  • Oil
  • 1/2 onion
  • 2 cloves of garlic
  • 1 large tomato
  • 1/2 red pepper
  • 1/2 green pepper
  • 1 tablespoon of butter
  • Sweet pepper and salt to taste

PREPARATION:

Open the sardines, remove the head and spine, but without separating the fillets.

Prepare the filling by mixing all the ingredients. In a bowl add the crushed bread, the egg, the chopped parsley, the juice of one lemon and the grated cheese. Season with salt, pepper and paprika. Involve everything.

Place an open sardine on the counter, spread part of the preparation over it and close it with a second sardine and repeat the process for the rest.

Dip the fillets in wheat flour, then in beaten eggs and then in breadcrumbs, and fry in preheated oil.

Bring a pan to the boil with water seasoned with salt, add the pasta and let it cook for 8 to 10 minutes.

Meanwhile, in a frying pan with olive oil, sauté the chopped onion and garlic. Add the chopped tomato and chopped red pepper. Season with salt and sweet pepper, add the green pepper and cook until the vegetables are soft. Finally, add the butter and cook for another 2 to 3 minutes. Drain the pasta, but save some of the cooking water. Add the pasta to the stew, add a little water and mix everything together.

To serve, place the pasta on a plate and the breaded sardines. Decorate with chopped parsley. It's ready to serve!
