Preparation

  1. Preheat the oven to 200ºC.

  2. In a pan add the milk and butter, bring to a boil.

  3. In a bowl, add the sugar, flour and eggs. Mix everything until you get a smooth and uniform dough.

  4. Add the boiled milk, stirring constantly. Pass the mixture through a fine mesh sieve. Let cool and place in the fridge for 1 hour.

  5. Grease the molds with butter and sprinkle with flour. Stir the cheesecake mixture and pour it into the molds.

  6. Add boiling water to the tray until it completely covers the bottom and cook in a bain-marie, in the preheated oven at 200ºC for around 25 minutes.

  7. Remove from the oven, let it cool a little and unmold. Serve the cheesecakes cold.
