INGREDIENTS:

  • 350 g long grain rice
  • 1.5 dl of olive oil
  • 200 g of pork steaks
  • 4 chicken legs
  • 100 g of ham
  • 150 g of chorizo
  • 1 dl of meat broth
  • 1 medium onion
  • 1 clove of garlic
  • 1 tomato
  • 1 large pepper
  • Pepper, salt to taste
  • 200 g of squid
  • 200 g of peas
  • 1 pinch of paprika
  • 4 prawns
  • 12 mussels
  • A few saffron threads
  • 8 dl of meat broth

PREPARATION:

In a frying pan, heat 0.5 dl of olive oil and sauté the chicken legs, pork steaks and ham cut into pieces, and the sliced chorizo over medium heat for 10 minutes.

In a large pan, add the sautéed meat and pour over 1 dl of meat broth and cover. Let it stew for 10 minutes.

In a frying pan, brown a chopped onion in 0.5 dl of heated olive oil.

Add the chopped garlic, tomato, pepper, chopped squid, fresh or frozen peas and a pinch of paprika.

Season with salt and pepper and let it simmer for 15 minutes over low heat.

Heat 0.5 dl of olive oil and sauté the washed prawns and mussels until they open.

Place the meat and vegetables in the pan and add the rice (washed and drained) and a few strands of saffron.

Add 8 dl of meat broth and cover. Let it cook for 25 minutes over low heat and serve.
