Preparation

  1. In a pan, heat the milk until it boils.

  2. Pour the hot milk over the bread crumbs, wrap everything and let it rest for 10 minutes so that the bread absorbs the milk well.

  3. In another pan, add the water, sugar, lemon peel and cinnamon stick. Add everything and let it boil until it reaches the pearl stage, about 4 minutes. Remove the lemon peel and cinnamon stick.

  4. Add the softened bread to the pan and heat over low heat, stirring constantly, until the bread breaks down completely and obtains a homogeneous, creamy texture - about 7 minutes. Add the ground almonds and mix everything together.

  5. Remove from the heat and add the beaten egg yolks to the mixture, stirring well to prevent them from cooking.

  6. Return to low heat until it boils and remove.

  7. Place the sweet crumbs on a platter or in individual bowls. Let cool slightly and sprinkle with cinnamon powder before serving!
