INGREDIENTS:
- 250 ml of water
- Zest of 1 lemon
- 1 pinch of salt
- 100 g of butter
- 150 g of wheat flour
- 1 teaspoon of ground cinnamon
- 4 eggs
- Oil for frying
- Powdered sugar and cinnamon for sprinkling
PREPARATION:
In a saucepan with water, add the lemon zest, a pinch of salt, and the butter. Bring to a boil.
Add the flour and cinnamon powder, remove the lemon zest, and stir constantly until you obtain a dough that comes away from the bottom of the pan.
Transfer the dough to a bowl and mix with an electric mixer to cool slightly.
Now add the eggs, one at a time, stirring well between each addition.
Let's fry! With the oil very hot, reduce the heat to low - this is important! If the heat is too high, the fritters will cook on the outside but remain raw on the inside. I use this pan because it has more depth.
With a spoon, place small portions of dough into the oil. They will turn on their own, but for those that don't, help them with a spoon.
When they are golden brown, remove them to a tray lined with absorbent paper.
And while they are still hot, sprinkle generously with powdered sugar and cinnamon.
