INGREDIENTS:
- 1 large homemade chicken
- 150 g bacon
- 3 ripe tomatoes
- 1 large onion
- 3 cloves of garlic
- 0.5 dl of olive oil
- 1.5 dl of white wine
- 1 teaspoon of sweet pepper
- 1 bay leaf
- 1 bunch of parsley
- Salt and chilli q.b
PREPARATION:
The day before, prepare the chicken, cut it into pieces, place them in a bowl and season them with the finely chopped garlic cloves, sweet pepper, salt, chilli and white wine. Wrap and let it marinate.
Peel and wash the onion and chop it finely. Remove the bacon rind and cut it into cubes. Wash and blanch the tomatoes, remove the skin and seeds and cut them into cubes.
Place a pan on the heat with the olive oil, let it heat up, add the drained chicken, bay leaf, parsley sprig, onion and bacon and let it cook until the chicken is golden. Then add the tomato and the meat marinade and cook, over low heat and stirring occasionally, for approximately 40 minutes.
Add a little water if necessary while cooking, adjust the seasoning, remove from the heat and serve decorated to taste and accompanied with white rice or mashed potatoes.
