INGREDIENTS:
- 2 soaked cod fillets
- 1000 g potatoes
- Butter
- Milk
- Salt
- Pepper
- Oil
- 1 Onion
- 3 cloves of garlic
- Parsley
- Tomato pulp
- 1 bay leaf
- 100 ml white wine
- Egg yolk
PREPARATION:
Bring water to a boil in a container and season with salt. When the water starts to boil, add the potatoes and cook. When they are cooked, drain the water and let it cool.
Reduce the potatoes into puree. Add a spoonful of butter and milk until you get a smooth puree. Season with salt and pepper.
Chop the onion, garlic and parsley.
In a frying pan, with olive oil, brown the onion, garlic and parsley. Add the tomato pulp and bay leaf and let it cook for 15 minutes.
Add the white wine and the cod cleaned and divided into flakes. Season with pepper and let cook for 5 minutes.
In a greased dish, spread half of the puree, add the cod filling and cover with the remaining puree.
Brush the surface with beaten egg yolk.
Place in a hot oven (200ºC) for around 20 minutes.
