INGREDIENTS:
- 700 ml of water
- 200 g of sugar
- 2 lemon peels
- 1 cinnamon stick
- 1 pinch of salt
- 20 g of butter
- 200 g of vermicelli
- 200 ml of milk
- 4 egg yolks
- Cinnamon powder
PREPARATION:
Bring the water to the boil with the sugar, lemon peels, cinnamon stick and butter and let it boil for 5 minutes over low heat.
Meanwhile, gently crush the vermicelli strands. Add the vermicelli to the pan, season with salt and mix everything. Let it cook over medium heat until the vermicelli is soft.
In a bowl with milk add the beaten egg yolks, beat everything.
Remove the cinnamon stick and lemon peel. Turn off the heat, add the milk and egg yolks to the pan, mix quickly. Let it cook for 5 minutes, stirring the yolks constantly.
Pour into bowls or on a platter and let cool.
Once cold, sprinkle with cinnamon powder.
