Preparation

  1. Wash the potatoes very well and cook them without the skin in water seasoned with salt, until they are tender.

  2. Drain the potatoes and reduce them to a puree using a potato masher or in a rice cooker.

  3. In a bowl, combine the mashed potatoes, sugar, eggs, self-raising flour and melted butter. Knead everything with your hands. Add the dried fruits and mix everything well.

  4. Preheat the oven to 180°C.

  5. Sprinkle a tray lined with parchment paper with flour. Take small portions with a tablespoon and coat in flour.

  6. Bake for approximately 25 to 30 minutes.

  7. Once cool, store the cakes in jars or pack them in cellophane bags and decorate to offer.
