Preparation time: 10 mins  |  Oven time: 45 mins  |  Serves: 6 - 8 people

INGREDIENTS:

  • 100 g of pineapple
  • 200 ml coconut milk
  • 150 g of butter
  • 275 g of sugar
  • 4 egg whites
  • 100 g grated coconut
  • 250 g flour
  • 1 Tbsp of baking powder

PREPARATION:

Grind the pineapple and add the coconut milk and grated coconut.

Beat the softened butter with the sugar.

Add the beaten egg whites to the butter and sugar. Mix everything.

Add to the pineapple and coconut mixture. Mix everything.

Add the flour and baking powder. Involve everything. Line the base of the pan with half pineapple slices. pour the dough over the top.

Place in the preheated oven at 180ºC for around 45 minutes.
