INGREDIENTS:
- 1kg of octopus
- 350g carolina rice
- 50ml olive oil
- 1 chopped onion
- 3 cloves of garlic, chopped
- 1 liter of hot water
- 2 bay leaves
- ½ diced red pepper
- 1 diced tomato
- Fresh coriander (1 bunch)
- Salt and pepper q.s.
PREPARATION:
First, cut the octopus into pieces, not too small, about 3-4 centimeters. Book.
In a large pan, add generous amounts of olive oil. Add the finely chopped onion and garlic. Let it cook until golden and fragrant.
Add the hot water, never cold, the bay leaves and the octopus. Season with salt, mix well! Let it cook for around 40 minutes. This is the time that will make the octopus tender.
Look how soft the octopus is now! Now add the diced red pepper and tomato. Involve everything.
Fresh chopped coriander - the secret of Portuguese flavor! Pepper to taste, cover and let it boil.
Add the washed rice, mix everything and let it boil over medium heat. When it starts to boil, lower the heat to low heat - this is the trick to keep the rice loose and let it cook for around 12 minutes without stirring too much.
Serve very hot, preferably on a pretty platter for the whole family to share.
