INGREDIENTS:

  • 200 g of sugar
  • 12 gems
  • 2 eggs
  • 200 ml of water
  • 1 cinnamon stick
  • 1 lemon peel
  • Butter for greasing
  • Sugar for sprinkling

PREPARATION:

In a saucepan, bring the water, sugar, cinnamon stick and lemon peel to a boil. Let it boil for around 3 minutes until it reaches 180°C (pearl point). Fill a spoonful of syrup and let the liquid pour out. If it comes out in a string, in the form of pearls, it's ready. Remove from the heat and let it cool a little. Reserve the cinnamon stick and lemon peel.

In a bowl, beat the yolks and whole eggs with a mixer until the mixture doubles in volume and becomes light in color, about 10 minutes.

Grease a mold with butter and sprinkle with sugar. Pour the dough into the pan.

Place in a preheated oven at 180ºC for 20 minutes. Remove, let cool and pour over the sugar syrup. Decorate with the reserved lemon zest and cinnamon stick.
