INGREDIENTS:
- 2 fresh, cleaned mackerel (carapaus)
- 1 onion
- 4 garlic cloves
- 100 ml olive oil
- 100 ml white wine
- 1 tbsp sweet paprika
- 1 tbsp salt
- 1 tsp black pepper
- 600 g roasting potatoes
- 1 large tomato
- ½ red bell pepper
- Chopped parsley, to taste
PREPARATION:
In a bowl, combine the sliced garlic cloves, olive oil, white wine, sweet paprika, black pepper, salt, and chopped parsley. Mix everything together and set aside.
My mackerel are already cleaned, washed, and well rinsed. Make three diagonal cuts on each side of the fish.
In a baking tray, arrange the onion cut into half-moons. Add the fish and drizzle it with the sauce on both sides. Cover and let it marinate in the fridge overnight.
Preheat the oven to 400°F (200°C).
Arrange the washed and drained potatoes around the fish. Add tomato slices and red bell pepper strips around it, and drizzle with olive oil.
Bake at 400°F (200°C) for about 30 to 35 minutes, turning the fish over halfway through.
Here are our mackerel, ready! Place them on a serving platter, drizzle with the sauce, garnish with parsley, and serve piping hot.
