INGREDIENTS:
- 2 soaked cod fillets
- 5 potatoes
- 2 sliced onions
- 2 cloves of garlic, chopped
- 1 bay leaf
- Extra virgin olive oil q.s.
- Fresh parsley
- Paprika q.s.
- Salt (if necessary)
- Black olives to taste
PREPARATION:
In a frying pan, add the olive oil and let it heat up. Add the cod and let it fry for about 5 minutes on each side, or until cooked and golden. Transfer to a platter and set aside.
In the same oil, fry the potato slices, previously seasoned with salt. Remove, drain on absorbent paper and place next to the cod.
Still in the same oil, add the sliced onion and chopped garlic cloves and sauté until soft. Lower the heat, add the bay leaf and paprika to taste. Stir and let it boil a little. Decorate with plenty of parsley. Arrange the onion and olive oil over the cod. Add the black olives. Serve immediately.
