Preparation

  1. Preheat the oven to 200ºC.

  2. For the filling: place a pan over medium heat, add the egg yolks, sugar and water. Using a whisk, stir everything very well until the cream thickens. Once it thickens, remove from the heat and stir a little more and let it cool.

  3. Cut the puff pastry into circles (about 6 circles on each sheet), place them on a tray sprinkled with flour and brush with the egg yolk and milk mixture.

  4. Place in a preheated oven at 200ºC for 20 minutes.

  5. Remove the puff pastry from the oven and let it cool.

  6. Spread the side with the egg custard and serve sprinkled with pieces of puff pastry.

  7. Decorate with cinnamon and powdered sugar.
