INGREDIENTS:

  • 3 soaked cod fillets (700g)
  • 700g medium potatoes
  • 700g roasted chestnuts
  • 2 large onions
  • 1/2 red pepper
  • 3 cloves of garlic
  • 4 cloves garlic
  • 100ml white wine
  • Olive oil, bay leaves, spices

PREPARATION:

Preheat the oven to 180ºC.

Cut the potatoes in half and place in a bowl. Season with salt, paprika, chopped garlic and pepper. Drizzle with white wine and add the bay leaf. Mix well to absorb the flavors. Now, drizzle with generous amounts of olive oil and add the red pepper strips. Book.

In an oven dish, make a bed of onion in half moons. Place the cod fillets on top and arrange the potatoes and pepper around it. Drizzle everything with the delicious marinade. Season with white pepper and drizzle again with olive oil. Trick: turn the cod fillets over and baste the other side too – that way they’ll be very juicy!

Bake at 180ºC for around 40 minutes. But be careful: after 20 minutes, add the chestnuts and drizzle everything with the sauce that has formed. Put it back in the oven and let it finish baking.

ACCOMPANIMENTS: White rice, sautéed vegetables, green wine.
