Preparation Time: 15 mins | Cooking Time: 48 mins | To: 4-6 people
INGREDIENTS:
- 350 g of whole grain rice
- 7.5 dl of water
- 35 g of butter
- 1 can of white beans
- 400 g of tomatoes
- 1 onion
- 1 clove of garlic
- 1 Tbsp coriander
- Salt and pepper to taste
PREPARATION:
In a pan with water, add the rice and bring to a boil. Stir from time to time until it boils. Cover and let cook for around 45 minutes, over low heat.
Drain the can of beans. Remove the skin from the tomato and cut into pieces.
In a frying pan, with melted butter, brown chopped garlic for 2 minutes.
Add the tomato, salt and pepper and cook for about 15 minutes, until you obtain a thick sauce. Add the chopped coriander and stir.
Add the tomato sauce and beans to the rice and mix. Cook for about 3 minutes to cool.
Place the rice and beans on a platter and serve.
