Preparation

Preheat the oven to 180ºC.

To make the pastry cream: in a pan, mix the sugar with the flour. Add the egg yolks, milk, vanilla flavoring and mix everything together. Bring to the boil, stirring constantly until it thickens. Place in a bowl, cover with cling film, let cool and set aside.

Roll out the puff pastry and fold it in half and mark the center. Spread half with the cream, sprinkle with cinnamon powder, place the other half on top and place in the fridge.

To make the topping: in a bowl mix the powdered sugar with 1/2 egg white and flour. Add the lemon juice, cinnamon powder and mix everything together.

Spread the top of the dough, cut into triangles and place on a tray lined with parchment paper.

Place in the preheated oven at 180ºC for around 15 to 20 minutes or until the cakes are cooked.
