INGREDIENTS:
- 500 red beans (cooked in salted water)
- 350 g spare ribs
- 1/2 beef chorizo
- 1/2 Moorish chorizo
- 1 Trás-os-Montes alheira
- 2 onions
- 150 g streaky bacon
- 1 bay leaf
- 50 ml of white wine
- 1 pinch salt
- pepper q.b.
- 1 drizzle of olive oil
- 0.5 dl of tomato pulp
- 2 carrots
- 1 diced tomato
- 1 Portuguese cabbage
- water q.s.
PREPARATION:
The day before, soak the beans in plenty of water. On the day, cook the beans in water seasoned with a pinch of salt.
In a pan with water, cook the spare ribs, the streaky bacon, the chorizo, the alheira and an onion, peeled and cut into pieces. Remove meat and sausages as they are cooked.
In a pan with olive oil, sauté the chopped onion until soft, the white wine and the bay leaf. Add water and let it boil. Add the carrots cut into cubes, the tomato pulp, the cabbage in pieces, the tomato in cubes, the cooked sausages cut into slices, let cook for 5 minutes.
After the time has elapsed, add the beans with a little of the cooking broth and the meat cut into pieces. Season with salt and pepper to taste. Cover and let cook, until cooked, for 15 minutes.
Serve the feijoada with sliced alheira and white rice.
