INGREDIENTS:
- 4 soaked cod fillets
- 2 onions
- 1 bay leaf
- 12 medium new potatoes
- 1 bunch of greens
- Salt
- 6 cloves of garlic
- Oil
PREPARATION:
Grease an oven tray with olive oil. Place the sliced onions at the bottom of the tray and place the cod fillets on top, skin side down and the sliced garlic cloves.
Lightly grease another baking tray with olive oil, and place the washed potatoes inside. Sprinkle with oil and salt. Bake for around 50 minutes.
Meanwhile, choose and wash the greens. Cook in boiling salted water for 7 minutes and leave to cool.
When the cod and potatoes are ready, remove the trays from the oven.
With your hand closed, “punch” the potatoes to slightly open the skin. Sprinkle the potatoes with another pinch of salt.
On a platter, place the potatoes and greens. Add the cod on top. Drizzle with the cod roast sauce.
