INGREDIENTS:

  • 1 sheet of puff pastry
  • 2 eggs
  • 80 g sugar
  • 1 tsp vanilla extract
  • 1 plain yogurt (120 g)
  • 250 g mascarpone cheese
  • 200 g shredded coconut
  • 30 g cornstarch
  • Pineapple slices, to taste

PREPARATION:

Preheat the oven to 180°C (350°F), with top and bottom heat on.

Line a tart pan with the puff pastry, fold the edges inward, prick the bottom with a fork, and set aside.

In a large bowl, combine the eggs, sugar, and vanilla extract. Whisk until smooth. Add the yogurt and mascarpone cheese, and whisk well until you get a smooth, even cream.

Add the shredded coconut and cornstarch. Whisk a little more until everything is well combined.

Pour the mixture over the puff pastry and arrange the pineapple slices on top.

Bake for 40 to 45 minutes. During the last 15 minutes, increase the temperature to 200°C (400°F) to golden the surface.

Remove from the oven and let it cool completely before unmolding. Serve the tart nice and chilled!
