INGREDIENTS:
For the base:
- 200 g Maria biscuits
- 100 g melted butter
For the cream:
- 250 g mascarpone cheese
- 200 ml cream
- 100 g powdered sugar
- 2 sheets of gelatin
- 1C. (tea) vanilla flavor
For the strawberry jam:
- 300 g of strawberries
- 2C. (soup) lemon juice
- 80 g of sugar
PREPARATION:
In a bowl, soak the gelatine leaves in cold water.
Place the cookies in a processor or blender and grind. Add the melted butter and mix everything.
Line a 20 cm diameter tart pan with a removable bottom, tamping down well. Place in the fridge for 15-20 minutes.
In a bowl add the mascarpone cheese, sugar, vanilla flavoring and mix everything together.
Remove the gelatin from the water and microwave for 30 seconds, until melted.
Remove some cream cheese and sugar and mix with gelatin. Add to the cream cheese and mix very well.
In a mixer, beat the cream until creamy. Add the cream to the cream cheese and mix everything together.
Pour the cream over the biscuit layer. Place in the fridge for 3 hours to solidify.
For the topping: in a bowl, cut the strawberries into small pieces.
In a pan over low heat, add the strawberries, lemon juice, water and sugar. Mix everything and let it cook for 20 minutes, stirring constantly. Turn off the heat and let it cool.
Place the strawberry jam on top and place back in the fridge for 4 hours to solidify. Serve very cool.
