Preparation

  1. Turn the oven on to 200 degrees.

  2. Roll out the dough well and divide it into three equal strips. Brush each strip with a little water and sprinkle generously with sugar. Layer the strips on top of each other, you will have a layer of three strips.

  3. Trim the edges and divide the strip in half and overlap again, and you will have a layer of 6 strips. Trim the edges.

  4. Cut strips approximately 1 cm thick and place on a baking tray at a distance, as they will enlarge.

  5. Bake in a preheated oven at 200 degrees for about 25 minutes until golden and crispy.

  6. For creamy and delicious pastry cream. In a pan, put 200ml of milk on the heat and let it start to boil.

  7. In a separate bowl, mix 50ml of milk, 1 whole egg, 2 egg yolks, sugar and cornstarch very well. Add this mixture slowly to the hot milk, stirring constantly, until the cream is very thick and homogeneous. Remove from the heat and let cool completely before filling.

  8. The palmiers are ready, remove from the oven and let cool. Fill the palmiers with the cream and sprinkle with powdered sugar if desired.
